Bacon Baked Beans

I made this recipe for a Memorial Day party we went to. Everyone seemed to really enjoy them and thought it was a good twist on regular baked beans. This recipe makes a lot, we fed about 10 people and had plenty of leftovers.

 To start, grab a large dutch oven and heat it on mediun-high. Once it’s heated add 12 slices chopped bacon and cook until crisp. Then add 1 medium chopped yellow onion and a large pinch of salt and pepper, cook until the onions are tender, about 10 minutes. Add 3 chopped garlic cloves and cook for another 1-2 minutes, until you smell the garlic. Next add 1-28oz can fire roasted tomatoes, 3-15oz cans cannellini beans (drained and rinsed), 3/4cup brown sugar, 1/4cup cider vinegar and 2tbl each dijon mustard and worcestershire sauce

Simmer partly covered for an hour, taste for salt and pepper. Simmer another 30 minutes uncovered then enjoy.

Ingredients

12 slices bacon, rough chopped

1 medium yellow onion, rough chopped

3 garlic cloves chopped

1-28oz can fire roasted tomatoes

3-15oz cans cannellini beans, drained and rinsed

3/4cup brown sugar, light or dark

1/4cup cider vinegar

2tbl dijon mustard

2tbl worcestershire sauce

salt and pepper, to taste
